Ingredients

3 ripe bananas (mashed)

1/2 cup blended cottage cheese

2 eggs

1/3 cup maple syrup or honey

1 tsp vanilla extract

1 1/2 cups all-purpose or whole wheat flour

1 tsp baking soda

1/2 tsp salt

Optional: 1/2 cup dark chocolate chips or chopped walnuts


Instructions

1. Preheat oven to 350°F (175°C). Line a loaf pan with parchment.

2. Blend cottage cheese until smooth. In a large bowl, mix with mashed bananas, eggs, syrup, and vanilla.

3. In a separate bowl, whisk together flour, baking soda, and salt. Add to wet mixture.

4. Fold until just combined. Stir in any optional mix-ins.

5. Pour batter into pan. Bake 50–60 minutes or until a toothpick comes out clean.

6. Cool before slicing. Store in fridge or freeze slices for later.
