Description
Moist, protein-rich banana bread made with cottage cheese. Perfect for breakfast, snack, or post-workout fuel.
Ingredients
3 overripe bananas
3/4 cup cottage cheese (blended if chunky)
2 eggs
1 1/2 cups all-purpose flour (or oat flour)
1 tsp baking soda
1/4 tsp salt
1/3 cup sugar or maple syrup
1 tsp vanilla extract
Instructions
1. Preheat oven to 350°F (175°C) and grease a loaf pan.
2. Mash bananas in a large mixing bowl.
3. In a separate bowl, whisk cottage cheese, eggs, and vanilla.
4. Stir the wet ingredients into the mashed bananas.
5. In another bowl, mix flour, baking soda, salt, and sweetener.
6. Gently fold dry ingredients into the banana mixture.
7. Pour batter into prepared pan and smooth the top.
8. Bake for 50–60 minutes until toothpick comes out clean.
9. Cool 10 minutes in pan, then transfer to wire rack.
Notes
Use full-fat cottage cheese for extra moisture.
Add chopped nuts or chocolate chips for variety.
Store in airtight container at room temperature or freeze slices for later.
