Ingredients
1 cup cottage cheese
2 large eggs
3/4 cup all-purpose flour (or almond flour for low-carb)
1/2 tsp baking powder (optional)
Salt to taste
Fresh herbs (optional)
Instructions
1. Preheat oven to 375°F (190°C).
2. In a bowl, mix cottage cheese and eggs until combined.
3. Add flour, baking powder, and salt; mix into a soft dough.
4. Divide dough into 4 equal parts and flatten each into a round flatbread.
5. Place flatbreads on a baking sheet lined with parchment paper.
6. Bake for 15-18 minutes until golden brown.
7. Serve warm with your favorite toppings.
