Ingredients
1 cup full-fat cottage cheese
2 cups marinara or pasta sauce (warm)
1–2 tbsp reserved pasta water (optional)
1 tbsp olive oil
2 cloves garlic, minced
Salt and pepper to taste
Fresh herbs (basil, parsley) for garnish
Grated parmesan (optional)
Instructions
1. Blend cottage cheese until smooth using a food processor or hand blender.
2. Heat olive oil in a pan, sauté garlic until fragrant.
3. Add marinara or pasta sauce and simmer for 2–3 minutes.
4. Remove sauce from heat. Let it cool slightly.
5. Stir in the blended cottage cheese slowly, mixing until creamy.
6. If needed, add pasta water to thin the sauce to desired consistency.
7. Taste and season with salt and pepper.
8. Toss with your favorite cooked pasta and garnish with herbs and cheese.
Notes
Use whipped cottage cheese for faster prep.
Avoid high heat after adding the cheese to prevent curdling.
Try variations with roasted red peppers or pesto.
