Description
This cottage cheese pasta sauce is creamy, healthy, and packed with protein. A quick, delicious alternative to traditional white sauces.
Ingredients
1 cup full-fat cottage cheese
2 tbsp olive oil
1–2 garlic cloves
¼ cup grated parmesan
¼–½ cup pasta water
Salt and pepper to taste
Optional: lemon zest, chili flakes, fresh basil
Instructions
1. Cook pasta and reserve ½ cup of water.
2. Blend cottage cheese, garlic, parmesan, olive oil, salt, pepper, and ¼ cup pasta water until smooth.
3. Warm sauce gently in a pan and add more water as needed.
4. Toss pasta in sauce until evenly coated. Serve hot.
Notes
Use full-fat cottage cheese for best texture.
To make it vegan, use dairy-free cottage cheese and nutritional yeast.
Pairs well with spinach, peas, or grilled chicken.
