This Instant Pot pancake recipe creates one giant fluffy pancake that’s moist, tender, and incredibly easy. A perfect no-flip breakfast solution.
Ingredients
2 cups all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 1/2 cups milk
2 large eggs
2 tablespoons melted butter
1 teaspoon vanilla extract
Cooking spray or butter for greasing
Instructions
1. In a large bowl, whisk together flour, sugar, baking powder, and salt. 2. In another bowl, whisk milk, eggs, melted butter, and vanilla extract. 3. Combine wet and dry ingredients; mix until just combined. 4. Grease Instant Pot insert thoroughly or line with parchment sling. 5. Pour batter evenly into the insert. 6. Seal lid; set Instant Pot to Pressure Cook for 40 minutes. 7. Allow natural pressure release. 8. Remove pancake, cool slightly, slice, and serve.
Notes
Do not overmix the batter.
Use natural release for perfect texture.
