Description
Quick and easy sheet pan fish tacos with roasted haddock, bell peppers, onions, and zesty lime crema.
Ingredients
2 large sweet bell peppers (red, orange, or yellow)
4 small red onions
2 tbsp olive oil
2 tbsp fajita seasoning
2 large haddock fillets
1 lime
12 corn tortillas
1/4 cup fresh cilantro
1/2 cup sour cream (or Greek yogurt)
1 tbsp fresh lime juice
1 pinch garlic powder
1 pinch sea salt
Instructions
1. Preheat oven to 400°F.
2. Slice bell peppers and onions into ½-inch strips.
3. Toss vegetables with 1 tbsp oil and 1 tbsp fajita seasoning on sheet pan.
4. Roast vegetables for 10 minutes, stirring once.
5. Add haddock fillets to pan, drizzle remaining oil, sprinkle remaining seasoning.
6. Roast additional 7–8 minutes until fish flakes easily.
7. Warm tortillas in foil during final roasting.
8. Squeeze lime over fish and vegetables after removing from oven.
9. Prepare lime crema by mixing sour cream, lime juice, garlic powder, and salt.
10. Assemble tacos with fish, vegetables, lime crema, and toppings.
Notes
Optional toppings: sliced avocado, shredded cabbage, diced tomatoes, fresh cilantro, hot sauce.
